Menu for 3/8 - 3/14

Well this week is not planned by the sales. I know... the horror. Anyways Dustin had requested several meals this week and I am trying to use some stock up. We live in a smaller townhouse. So we have an apartment sized fridge with a tiny freezer (not even an ice maker). Well last week we got a tad bit over zealous on sale items and our freezer is barely keeping up with keeping it all frozen. I would love to do more for stocking up and cooking ahead, but we just don't have the room right now. So here we go...

Sunday - leftovers and frozen pizza
Monday - Mini meat loaves and asapargus
Tuesday - Fajitas
Wednesday - Date Night In (recipes to be included later)
Thursday - Dustin's Night to Cook
Friday - BBQ Chicken Mac and Cheese Casserole
Saturday - Focaccia Pizza (Yeah so that new bread recipe was a huge hit... maybe too much)

I am going to try to start putting more pictures and recipes up. We just got a matching set of plates today!!!!

New Desire

Let me take a moment to be sad. According to the news today unemployment has hit just above 8%. There is more and more stories of violence and theft. Too many news headlines of husband’s that lose their jobs and end up killing their whole families. My heart is completely broken.

Many Americans fell into the mentality that we deserve it all. No need to save up and earn the things we want; simply put them on layaway, but that wasn’t good enough. Now put it on credit, no payments for 12 months, 0% financing… and the list goes on and on. We (I speak of our nation as a whole) have destroyed ourselves. This me first at any cost thinking has brought our once strong nation to its knees. I won’t get overly political, but we need a change.

This comes to a new point. After I’m so sick of hearing the news and how we are all doomed, I turn to my blogs. I am new to the blog world, but the few blogs I have subscribed to have been a huge blessing. These great women support their husbands, raise their kids, balance and tighten budgets. They live life with prudency and humility. Now none of us are perfect and we all splurge. But this new community has given me hope. We will bring revolution to this country. Show them that cutting back does not mean cutting out fun, life, or variety. Each of us have influence, no matter how small. We have the ability to show others how to “do it right” (or maybe just slightly better). Today I have a renewed sense of purpose in life. Today is the first day of my new passion. Teaching others the way of the budget! To cook for their families to save money! To research deals! To find cheap and free entertainment! To be satisfied with the frugal lifestyle!

May each of you have a renewed hope today. God Bless each of you!

Shrimp, Tomato, Basil

2 Tbls Butter
1/2 chopped Onion
3 or 4 crushed cloves of Garlic
3 Tbls Flour
8 oz Milk (more or less depending on desired thickness)
1/2 cup Parmesan
16oz Pasta (any shape)
1/2 pound Shrimp
1 bunch of chopped fresh Basil
2 seeded and chopped Roma Tomatoes

Sautee Shrimp. Cook pasta to al dente. In medium pot, melt butter and cook onions and garlic until soft. Add in flour, cook one medium until flour is light brown. Add milk and bring to a boil. Turn heat to low and simmer as sauce thickens. Add pasta, basil, and tomatoes. Simmer for a couple minutes and serve hot.

Date Night for Two

This has come at a perfect time for us. Dustin and I don't get much time together. He works long hard hours and is exhausted when he gets home. I know all to well how draining desk work is. Anyways moving on... We are saving to buy a house!!! So this means its time to cut out our (MY) dinner out every week. When the Happy Housewife put out a date night challenge, seemed like a great train to jump on. So here we go...

Caesar Salads (we happen to have croutons and Caesar dressing!!)

Sausage Stuffed Mushrooms (Using a little bit of the hot sausage I am using Saturday for breakfast)

Shrimp, Tomato, Basil (Our favorite home made "fancy" meal)

Apple Crisp

Here is to many date nights... and our dreams of home ownership!!! I'll post pictures this weekend.

Focaccia Recipe

I have never had bread turn out ever!!!! I refuse to quit though, I tried yet again. I found a recipe and thought I'd give it yet another try. And guess what I totally rocked it!!! Here is the recipe for y'all.

3 cups Bread Flour
2 teaspoons Salt
1 tablespoon White Sugar
1 (.25 ounce) package Instant Yeast
1 1/3 cups warm Water (110 degrees F/45 degrees C)
3 tablespoons Extra Virgin Olive Oil, divided
2 tablespoons dried Rosemary
2 tablespoons grated Parmesan cheese

1. In a large bowl, mix together the flour and salt. Make a well in the flour. Sprinkle the sugar and yeast into that well. Carefully pour the water into the well. Let stand about 5 minutes. Pour 2 Tbls of the oil into the well. With a wooden spoon stir the mixture in the center of the bowl. Stir mixture until all the flour mixture is incorporated.

2. Turn out on a floured surface, and knead just until smooth. The dough will be soft and slightly sticky. Oil the bottom and sides of a clean bowl, place dough ball. Cover. Let rise until doubled, 30 to 45 minutes.

3. Punch the dough down. Oil cookie sheet. Gently press the dough out to about 1/2 inch thickness on sheet. Pour the remaining oil over the top of the dough. Use your fingers to dimple the dough. Sprinkle with the rosemary and the cheese. Place in a cold oven on the center shelf. Place a flat pan of hot water on the shelf below the bread. Let rise until doubled, 20 to 25 minutes.



4. Turn on the oven to 375 degrees F (190 degrees C). Bake the focaccia (with pan of water) for 20 to 25 minutes, or until browned on top. Remove from the pan, and cool on a wire rack. Maybe served warm or cold.



Yeah, ok that is where I picked some of the bread to taste on the side. It turned out great! Here is to hoping I have continued bread success!!!

Menu Plan for 3/1 - 3/7


Last week we had the Cabbage Soup Diet so of course all I did was dream of everything fun I couldn't eat. So this week we are spurgling a tiny bit...

Monday - Left overs (We had company tonight and have too much lasagna)
Tuesday - Ham and Mac & Cheese
Wednesday - Chicken Cordon Bleu and Italian Potatoes
Thursday - Dustin's Day to cook???
Friday - Pasta with cream sauce and bacon
Saturday - Mexican Casserole

I made focaccia tonight!!! I attempt bread all the time, but for the first time it came out!! I'll add the recipe with pictures later this week. Ok I'm out to enjoy a couple minutes with Dustin before my work week starts again.
